“String work”

This lacy decoration is technically very demanding, and extremely time consuming – but the effect is dramatic.  It is also extremely fragile, and adding one element to the cake can cause others to break!  It is a type of cake decoration that was developed in Australia, and is formally known as the “Lambeth” method.
